Dehydrated Plantain Chips – the easiest of Paleo snacks

The other day at the grocers I found plantains for the first time and I had to buy one.

I’ve seen so many recipes for plantains on different paleo sites and I was really curious how they taste. I recommend NOT eating them raw! Blech, however, made into oil-free, guilt-free chips in the dehydrator was a delightful way to enjoy them and they were so easy to prepare!

INGREDIENTS

. 1 large green plantain
. Fine sea salt

METHOD

1. Slice the plantains with a mandoline. (I used the 2nd thinnest level).
2. Put into dehydrator and sprinkle sparingly with salt.
3. Dehydrate for 8 – 10 hours at 60 dc until nice and crispy.

The first bite I thought, yeah they are nice, perhaps a bit bland, but they really grow on you. Whilst they are relatively high in carbs they are a great whole food and enjoyed in moderation they make a an excellent healthy snack. Plus, they would be a good conduit for a tasty dip as the flavour is not overpowering.

I almost forgot to get a photo of these and managed this one with the iPhone at the park before the kids tucked in! Sorry it’s not the best đŸ˜¦
